NOTES: Llano Estacado 2004 Cabernet Sauvignon is composed of Cabernet Sauvignon (99.3%) and a small amount of Merlot (0.7%) used for topping barrels. The Cabernet Sauvignon portion of the blend is from several Texas Vineyards including the Mont Sec Vineyard (Far West Texas), the Rising Star Vineyard (Southeast of Abilene, Texas) and the Reddy Vineyard (Texas High Plains).
The 2004 growing season brought ample rains to West Texas, allowing vines to extend the maturation period to yield a vintage of physiologically mature grapes of intense flavor. Drink this wine now, or allow it to bottle age over the next 2 - 3 years to enhance the bouquet and complexity of the wine.
Serve Cabernet Sauvignon at cool room temperature (57-60 F) with Texas B-B-Q beef, wild game or pasta. This wine is a healthy complement to any meal. Enjoy!
