NOTES: Our 2004 Cellar Reserve
Chardonnay was made exclusively from
grapes grown on the Mont Sec Vineyard
(Far West Texas). This wine is 100%
barrel fermented as characterized by the
sweet, toasty oak flavor. To enhance
richness in the mouth and aromatic
complexity, this wine has completed
secondary fermentation otherwise known
as "malo-lactic fermentation". In 2004
10% Viognier from the Mont Sec Vineyard
was used in blending to add spice and
complexity to this wine.
Our Cellar Reserve Chardonnay will
improve in complexity through 2005. At
the winery we have allowed 2 months of
bottle aging prior to release. This wine
is enjoyable by the glass or a perfect
complement to any meal. The Reserve
Chardonnay possesses a character that is
ideally paired with rich textured
seafood such as grilled halibut, sea
bass and lobster. |
