NOTES:   Our 2004 Chardonnay was made from grapes grown on the Rising Star Vineyard near Abilene, and the Mont Sec Vineyard (Far West Texas). A portion (approximately 20%) of the wine is fermented in our small French oak barrels, left in contact with primary lees (sur lie) for 90 days after fermentation. The balance of the wine (approximately 80%) being cold fermented to rise up the fruit character of the grapes. Roughly 20% of this wine (the oak portion) has completed malo-lactic fermentation further contributing to it's character and texture. Chardonnay is a white wine that will benefit from bottle aging. At the winery we have allowed two additional months of bottle aging prior to release. Compatible spices include dill, saffron, rosemary and marjoram and rich crème sauces. Enjoy a bottle tonight!
