NOTES: Our 2005 Cellar Reserve Chardonnay was made exclusively from grapes grown on the Mont Sec Vineyard (Far West Texas). This wine is 100% barrel fermented as characterized by the sweet, toasty oak flavor. To enhance richness in the mouth and aromatic complexity, this wine has completed secondary fermentation otherwise known as "malo-lactic fermentation".
Our Cellar Reserve Chardonnay will improve in complexity through 2007. At the winery we have allowed 3 months of bottle aging prior to release. This wine is should be enjoyable by the glass or a perfect complement to any meal. The Reserve Chardonnay possesses a character that is ideally paired with rich textured seafood such as grilled halibut, sea bass and lobster.
