The Llano Estacado 2007 Cellar Reserve Chardonnay is a blend of 88% Chardonnay and 12% Viognier. This wine was fermented in our new French Oak barrels and allowed extended lees contact to enhance complexity of aroma. This Chardonnay completed secondary (malo lactic) fermentation contributing to the texture of "feel" of the wine in your mouth.
Reserve Chardonnay is a white wine that will increase in aromatic complexity from additional bottle aging of 8 - 12 months. At the winery we age the wine 30-60 days prior to release making it ready to enjoy. Our 2007 Chardonnay features aromatic complexity with layers of tropical fruit and spice. Consider this expansive Chardonnay with richly textured fish such as halibut, cod, sea bass or lobster. For something different, try pairing it with grilled pork tenderloin that has been rubbed in Jamaican spices.
