Crafting a wine from botrysized grapes is a perfect example of the statement “a wine is made in the vineyard.” Botrytis cinerea (or Noble Rot) is a special mold that attacks grape clusters during harvest. Weather conditions have to be perfect at Harvest to support botrytis and its chemical action. By default, this wine is rarely made in West Texas. Through dehydration of the berries, the Noble Rot concentrates the sugars and flavors, resulting in a wine with distinctive aromas and rich flavors. When Noble Rot infects the grape cluster, a wonderful product can emerge. This is the case with our 2007 Late Harvest Riesling. Serve this wine chilled with your favorite cobbler or other fruit dessert. Enjoy!
